La Barbecue emerged from Austin's food trailer scene to become one of the city's most revered barbecue destinations. Founded by LeAnn Mueller, who comes from barbecue royalty (Louie Mueller Barbecue in Taylor), the restaurant produces brisket with a dark, peppery bark and luscious, melting interior. The beef ribs are comically large and deeply flavorful. Located in East Austin, the vibe is casual and community-oriented, with picnic tables, cold beer, and a line that moves faster than you'd expect. The chipotle sausage is a house specialty worth ordering.
